Aberdeen Angus Porterhouse steak is dry-aged for at least 3 weeks. in the special dry-aged display case in the store. The Porterhouse steak can only be cut from the whole beef loin with the tenderloin still attached. The Porterhouse steak consists of the sirloin steak (largest part) and the tenderloin starting part. These are separated by a T-shaped bone (the lumbar vertebra). It is an impressive steak, just because of its size (easily 500 grams). The Porterhouse steak is very tender and has a lot of flavor. According to the Scots, a “Porterhouse steak” is a T-Bone steak with an extra large piece of tenderloin.
